Mahi Mahi: Also known as dorado or dolphinfish, these are the beauty queens of the Gulf. With their vibrant colors and acrobatic jumps, mahi mahi are a favorite among our guests. They school up around floating debris and weed lines, so we'll keep our eyes peeled for those telltale signs. These fish grow fast and can reach up to 30 pounds in their first year. Catching one is an experience you won't forget.
Greater Amberjack: We call these bruisers "reef donkeys" for a reason. They're tough, stubborn fighters that'll test your strength and endurance. Amberjack hang around deep structure and wrecks, so we'll drop big jigs or live bait to entice them. They can grow over 100 pounds, and when you hook into a big one, you'll know it. Be ready for a workout!
Swordfish: The gladiators of the deep, swordfish are a rare and prized catch. We don't target them often on our 8-hour trips, but if conditions are right and you're up for the challenge, we might give it a shot. These fish live in deep water and we fish for them with specialized gear, often at night. Landing a swordfish is a bucket-list achievement for many anglers.
Lane Snapper: Don't let their smaller size fool you - lane snapper are feisty little fighters and excellent table fare. We find them around reefs and rocky bottoms, usually in depths of 30 to 200 feet. They're known for their subtle bite, so you'll need to stay alert. These tasty fish are a great target when we're bottom fishing, and they're often mixed in with other snapper species.

Fishing was off as Hurricane Idalia had just rolled through and the ground surge had changed things substantially. Jacob worked hard to get us on the fish and ensured we still had a successful trip. As avid freshwater fisherman the "bite" was definitely different and difficult to break old habits but they were patient with us and great with my 11 year old son. Greater amberjacks are hard-fighting reef fish that'll test your strength. They typically run 30-40 pounds but can top 100. You'll find them around deep wrecks and reefs in 60-240 feet of water. AJs are aggressive and will hit just about any live bait or large jig. They're famous for their powerful runs - be ready for your arms to burn! The best fishing is usually spring and fall as they migrate. Anglers love targeting them for the fight and their good eating. If you want to land a big one, use heavy tackle and large live baits like blue runners or hardtails. My local tip: when you hook up, get the fish away from the structure fast or it'll break you off for sure. It's a real rush when you get a big amberjack to the boat.
Lane snappers are feisty little fish that pack a punch for their size. You'll usually find them hanging around reefs and grassy bottoms in 70-230 feet of water. They average 14 inches but can get up to 20 inches and 7-8 pounds. These pinkish-red beauties with yellow-tipped fins are aggressive eaters, which makes them fun to catch. They're not picky - live shrimp, squid, or cut bait all work well. Lane snappers really get active at night, so that's often the best time to target them. Springtime through early fall is prime season when they're spawning. Locals love catching lanes because they put up a good fight and taste great. If you're after them specifically, try fishing deeper structure at night with smaller hooks. You might just catch a bonus lane while going for other snappers too.
King mackerel are sleek, toothy predators that'll make your reel scream. They average 15-25 pounds but can reach over 50. You'll find kings in open water from the surface down to about 150 feet. They're lightning fast, hitting speeds of 60 mph when chasing bait. Trolling with live bait or spoons is the go-to method. Kings are known for their blistering runs and aerial acrobatics when hooked. Spring and fall are prime seasons as they migrate through. Anglers love targeting them for the exciting fights and good table fare. If you want to land a big one, use wire leaders - their razor sharp teeth will slice through mono. My top tip: when a king skyrockets on your bait, don't set the hook right away. Let it run with the bait for a few seconds to get it in its mouth before coming tight.
Swordfish are one of the ocean's great predators, growing up to 15 feet long and 1,000 pounds. You'll find them in deep, warm waters over 1,500 feet. They're built for speed, hitting 40-60 mph when chasing prey. Swordfish hunting is a nighttime affair - they come up to feed around 300 feet after dark. To catch one, you'll need heavy gear and lots of patience. We use deep-drop techniques with large squid baits and glowing lures to attract them. It's a real battle when you hook up, sometimes lasting hours. Swordfish are prized for their rich, meaty flesh. The best time to target them here is April through September during spawning season. My top tip: use several lights on your rig to draw them in - these fish have huge eyes adapted for the deep.
