Gag grouper are hefty, hard-fighting fish that love structure. Adults average around 2-3 feet long and 20-30 pounds, with a drab gray coloration. You'll find the big ones offshore around rocky bottoms, reefs, and shipwrecks in waters 60-250 feet deep. Younger fish hang closer to shore. These grouper are ambush predators, so we target them by bottom fishing near good structure. Live bait like pinfish or mullet works great. Use stout tackle - at least 40 lb test line and strong circle hooks. When you hook one, get ready for a tough battle as they try to dive back into their rocky lairs. Gag grouper are prized for their mild, white meat that's great for frying or baking. Peak season is fall and winter when they move closer to shore. One local trick is to look for stone crab trap buoys - grouper love hanging around the traps to snack on crabs. Just be careful not to get your line tangled!
Mahi mahi are one of the prettiest fish you'll see, with electric blue and green colors that shimmer in the sun. Most average around 3 feet long and 15-30 pounds. They're fast growers but don't live past 5 years old. You'll find them near the surface in warm offshore waters, often hanging around floating debris or weed lines. These fish are a blast to catch - they put on an acrobatic show when hooked, leaping and tail-walking across the water. We usually troll for them with light tackle, using live bait like ballyhoo or artificial lures that skip on the surface. Peak season is spring through fall when the waters warm up. Mahi are popular for both their fight and their food value. The meat is mild and flaky white, great for grilling or frying up as fish tacos. A cool trick is to look for frigatebirds circling - they'll often lead you right to a school of mahi feeding on flying fish.
Swordfish are some of the ocean's most impressive predators. These powerful fish average 9 feet long and 400 pounds, but can reach up to 15 feet and over 1,000 pounds. You'll find them in deep, warm waters around 64-72°F, often at depths of 300 feet or more. They're fast swimmers, hitting speeds of 40-60 mph as they hunt squid and smaller fish. Swordfish put up an epic fight when hooked. We typically target them by deep-trolling at night when they feed closer to the surface. I like using squid for bait with a 6-foot fast action rod, 80-120 lb line, and 9/0 to 11/0 hooks. Bright lures with skirts work well to attract them in the depths. These fish are a real trophy, both for the challenge of landing one and their excellent meat. The steaks are firm and mild-flavored. Just be ready for a serious battle - once they're on, swordfish will do everything they can to dive deep and break free.
